Tuning using parts
I keep forgetting to make this an official post so I'll do it now. There aren't too many parts on these cars to tune and they'll stay that way. What you may do though is alter the build using lower rated components. My requirement here is you don't install parts better than came on the T/A build.
I set the builds with sport sway bars. If one wanted a different feel in their suspension they may freely switch between stock, street, and sport sway bars (depending upon availability). You're also allowed to change the locking differential to stock or street and for the same matter, revert the transmission to stock.

Any reason or more so what benefit would a driver have with removing said sway bars or differential?

For tight and twisty tracks teams apply smaller sway bars, or disconnect them altogether. Large sway bars are better suited on cars racing at tracks with high speed continuous corners than they are on cars racing at locations like Suzuka's East circuit. T/A doesn't race there, it's just a great example.
There's also the balance issue; drivers can build something that feels better suited to their driving style.
A car with a larger front sway bar induces understeer / counteracts oversteer.
A car with a larger rear sway bar induces oversteer / counteracts understeer.
In terms of the differential, on twisty tracks an open differential won't put up a fight in side-to-side transitions. The drawback? The car is a one-legger.
