Kidding; I agree in your sentiment. I played Falcon 3.0 A LOT in my teen years. I had the Thrustmaster Mark II setup at my computer and all I was missing were rudder pedals and I would've had a sweet flight simulator in my room. I have a bunch of respect for military equipment and see myself slinging a metal bird through the skies in a parallel dimension.

I play(ed) a highly, highly modfiied version of Jane's USAF. It was incredibly realistic. I got shot down alot when I first started. Very, very challenging.
I have a HOTAS (Hands On Throttle And Stick) setup which has a button mapping software allowing me to do everything without ever letting go of the stick or throttle. It had a rudder "pedal" that was finger operated.
The game is still around, but I hardly ever play it anymore. Not enough time for it and everything else, and, mainly, no high-performance PC to run it smoothly.
